I've been experimenting with sourdough starter for the past few weeks and it's been quite a journey. The first batch didn't work out because I wasn't feeding it frequently enough. After some research I learned that consistency is key especially in the first two weeks. I now keep it on the counter and feed it at the same time each day with equal parts flour and water. The bubbles started showing up around day five and by day ten it had that tangy smell you mentioned. I made my first loaf last weekend and while the shape was a bit uneven the flavor was fantastic. The crust came out crispy and the inside was chewy with nice air pockets. Next time I want to try adding some whole wheat flour to see how it changes the texture.
