My father is quite similar — anything with a little rosiness in steak is vetoed. Afterwards, there are complaints over toughness or dryness of even high-quality beef, but the doneness order is what truly dictates tenderness. It's a known give-and-take. One method I've tried is to quietly highlight dishes when out at excellent eateries, especiaIly if they contrast home attempts – I'll point out the juiciness or ideal crisp in the restaurant dish and let that experience inform future preparation.
