I think the key is to let the dough rest overnight in the refrigerator. That extra time really helps develop the flavor and makes the texture much more workable the next day. When I tried rushing it, the crust came out tough and didn't have that nice flaky layers people look for. Also, using cold butter pieces that are about pea-sized before adding the water makes a big difference. You want to see those small chunks still visible after mixing. Then when it bakes, the steam from the butter creates those little air pockets. For the filling, I have been experimenting with adding a tablespoon of apple cider vinegar to balance the sweetness of the fruit. It sounds odd but it really brightens up the whole thing. I would suggest giving it a try with your next batch and see if you notice the difference.

I started reading that historical fiction novel you mentioned last week and I can see why you thought I would enjoy it. The way the author weaves together the different timelines is really well done though I did find the first few chapters a bit slow while they were setting up all the characters. Once I got past the initial setup the pacing picked up considerably. The main character journey through the different cities was described so vividly that I felt like I was there. I am about halfway through now and curious to see how they resolve the central mystery. Let me know if you have any other recommendations along similar lines I would love to hear what else you have been reading lately.

The chapter about the old architecture in that coastal town was particularly well written. It reminded me of a trip I took a few years ago where I spent a week exploring similar buildings and streets. The atmosphere that the author created really captured that sense of place and history. I found myself looking up photos of the actual locations mentioned in the book.
